The Alliance and the Service Science Society jointly organized the “Omnichannel Restaurant Platform Integration: AI × Service Design Thinking Series”, commissioned by the Institute for Information Industry.
To help restaurant industry professionals understand the latest applications and trends in generative AI and enhance their capabilities in service design and digital transformation, the AI × Service Design Thinking Series – Kaohsiung Session was conducted over four days. The course guided participants through a progressive learning journey covering customer insights, service design, AI tool applications, and AI Agent implementation. Through lectures, case studies, and hands-on exercises, participants explored the potential applications of generative AI in restaurant service scenarios.
Day 1|From Customer Insights to Service Blueprint Design
The first day introduced the digital transformation trends facing the restaurant industry and provided an overview of AI-enabled restaurant services. Participants used generative AI to analyze actual questionnaire and customer data, identify customer needs and behavioral patterns, and transform customer journeys into service blueprints. They also learned to break down key service tasks in restaurant operations and identify opportunities for AI Agent implementation.

Day 2|Unlocking the Power of AI Tools The second day focused on hands-on practice. Participants were introduced to generative AI tools such as ChatGPT, Gemini, and Claude, with an emphasis on prompt engineering and structured questioning techniques. They then used NotebookLM to build a customized knowledge base based on restaurant SOPs, menus, and frequently asked questions. Through Make, participants also practiced building automated workflows and developed their first restaurant-oriented AI Agent capable of making decisions and taking actions.

Day 3|Generative AI Trends and Restaurant Industry Cases
The third day focused on the development and technological trends of generative AI, helping participants build a broader understanding of AI applications. Real-world restaurant industry cases were also presented, demonstrating how AI can be applied to customer service, operations management, marketing, and process automation. Through case discussions and exchanges, participants explored potential AI applications within their own restaurant operations.



Day 4|From Needs to Implementation: Building a Restaurant-Specific AI Agent
The final day focused on translating practical needs into AI solutions. Participants integrated the knowledge and skills acquired throughout the course, beginning with the identification and analysis of operational needs and then developing AI Agent solutions tailored to their restaurant service scenarios. Through prototype development and final presentations, participants transformed their AI concepts into concrete application proposals and received feedback to further refine their solutions and explore future implementation opportunities.


Through the four-day learning journey of “Understanding AI → Mastering AI Tools → Learning from Cases → Hands-on Implementation,” participants went beyond simply learning about generative AI. Starting from real-world restaurant service needs, they applied AI to customer insight analysis, service process design, knowledge management, and workflow automation, thereby strengthening their practical capabilities for adopting AI and advancing digital transformation in the restaurant industry.
